A mixed berries sorbet is a delicious and healthy treat that you can make in 5 minutes. This version is made with only 3 ingredients. You just need some frozen berries, some sweetener and a little lime juice.

Ingredients to Make Mixed Berries Sorbet

The main ingredients to make a mixed berries sorbet is some frozen berries. These can be a mix of whatever berries you like such as raspberries, blueberries, blackberries, grapes or blackcurrants.

You can actually make a great tasting sorbet with just berries but I like to add two additional ingredients to make the sorbet more of a treat.

The first is some liquid sweetener. The berries will already have a natural sweetness, but I like to add just a little extra. The amount of sweetness needed will depend upon the berries used, since some berries are sweeter than others. You can always add a little sweetener, and then add a little more if you think it needs it.

You can use many different types of liquid sweetener but I usually use maple syrup, sometimes substituting for agave syrup.

The second ingredient I add to sorbets is lime juice. Citrus fruits add some tartness to the sorbet, which I think enhances the overall flavour.

How to Make Mixed Berries Sorbet

Mixed berries sorbet is super quick to make, and involves adding all of the ingredients to a food processor and blending everything together.

The liquid from the lime will help to think out the sorbet slightly and help the frozen berries to blend. I find that some additional water is also required, so I add two tablespoons of water at a time and then blend for another few seconds. Then I scrape down the sides a blend again. If the mixture is still too thick to blend, I add a little more water and repeat the process.

You can get a good sense of when the mixture is thin enough. It should start to blend easier without the berries being thrown to the side of the food processor when you start to blend and requiring the sides to be scraped down.

Once the sorbet is evenly mixed, its ready to serve in bowls. You can also add to a container and put it in the freezer if you’re not planning on eating it all straight away.

Equipment

Ingredients
  

  • 150g cherries (frozen)
  • 150g raspberries (frozen)
  • 3 tbsp like juice
  • 3 tbsp maple syrup

Instructions
 

  • Add the frozen berries to the food processor, along with the lime juice and the maple syrup.
  • Blitz the mixture in the food processor for a few seconds, and then scrape down the sides if needed, and repeat the process.
  • If the frozen berries are not blending smoothly, add 2 tablespoons of water and blitz again. Add more water if required, 2 tablespoons at a time, until there is enough liquid for the berries to blend into a smooth texture.
  • Serve in bowls.
