This chickpea sandwich spread is a very tasty and is a wonderful plant based sandwich filler. It is based around chickpeas and tahini, two of the main ingredients in hummus, and then adds a melody of flavours through the addition of the other ingredients that interact to produce a great tasting result.

I find there are not a lot of vegan sandwich fillers out there, so with this recipe, you can make your own that is healthy and very tasty too.

Chickpea Sandwich Spread Ingredients:

  • Chickpeas
  • Tahini
  • Maple syrup
  • Red onion
  • Dijon mustard
  • Cornichons
  • Olives (pitted)
  • Capers
  • Celery
  • Bread

How to Make this Sandwich Spread

The first thing you need to do with this dish is to mash the chickpeas into a smooth consistency. It’s doesn’t need to be completely smooth, and I like to leave it a little lumpy, with the odd full chickpea escaping whole.

To do this, drain the chickpeas, and place in a bowl. Mash with a potato masher until you reach the desired consistency. You can also use a blender for this step but I find there is less washing with the potato masher.

Then the goal is to finely chop the rest of the chickpea spread ingredients after any peeling and washing that is required. This includes the onion, celery, cornichons, capers and olives. Finely chop all of these and add to the bowl along with the chickpeas.

Then add the tahini, mustard, maple syrup and mix everything together until evenly mixed. Just take extra care to make sure all of the tahini is mixed in, as I have been lazy with this before and ended up with a mouth full of tahini.

Then spread on some good quality bread and add some chopped tomatoes and crispy leaves. You can also experiment with some of your other favourite sandiwich fillers.

Ingredients
  

Chickpea Sandwish Spread

  • 1 can chickpeas
  • 1 stick of celery
  • 2 tbsp tahini
  • 1 tbsp maple syrup
  • 1 red onion (small)
  • 10 olives
  • 8 cornichons mini gherkins
  • 1 tsp Dijon mustard
  • 2 tbsp capers

To Make the Sandwiches

  • 8 slices sourdough bread
  • 2 tomatoes
  • lettuce leaves

Instructions
 

  • Drain the liquid from the chickpeas and place in a bowl. Mash with a potato masher until the chickpeas have reached a paste like consistency.
  • Finely chop the celery and the peeled onion and add to the bowl. Then finely chop the olives, cornichons and capers and add to the mixture.
  • Add the maple syrup, Dijon mustard and tahini Mix everything together well. Then spread the mixture onto some nice good quality sourdough or wholemeal bread.
  • Add some chopped tomatoes and crispy leaves.
  • Serve one sided or make into healthy and tasty sandwiches.
