Sweet and Sour Vegetables

Homemade sweet and sour sauce, served with a selection of vegetables. Serve with cooked rice or noodles (not included in recipe)

Ingredients
  

  • 1 onion chopped
  • 2 cloves garlic finely chopped
  • 1 tbsp oil
800 grams of vegetables, made up of:
  • 300 g broccoli a small head, cut into florets
  • 160 g carrot 1 large, chopped
  • 1 yellow pepper
  • 8 vine tomatoes
  • 12 baby corn
  • 4 pineapple rings
For the sauce:
  • 150 ml pineapple juice
  • 4 tbsp apple cider vinegar
  • 3 tbsp tomato puree
  • 3 tbsp maple syrup
  • 2 tbsp tamari
  • 1 tbsp arrowroot powder

Method
 

  1. Prepare the vegetables by chopping and peeling everything (if required)
  2. Add a tablespoon of oil to a pan along with the garlic and onion. Cook for two minutes.
  3. Add the rest of the vegetables to the pan along. Keep on a relatively high heat, stirring regularly for another five minutes. Turn down the heat if the sauce is not ready.
  4. In a separate pot, add the pineapple juice, tomato puree, apple cider vinegar, maple syrup and tamari. Turn on a high heat and stir regularly. 
  5. Once sauce starts to bubble turn down to a low/medium heat and sprinkle in the arrowroot powder. Stir in well.
  6. One sauce has thickened, pour over the vegetables and cook for another 5 minutes on medium heat with the sauce bubbling gently. Stir regularly.
  7. Remove from the heat and serve with rice or noodles
