Portobello Mushroom Burgers (Vegan)
Juicy portobello mushroom burgers that are quick and tasty

- 4 portobello mushrooms
- 4 tbsp olive oil
- 3 tbsp balsamic vinegar
- 3 tbsp soy sauce (or tamari)
- 1 tsp mixed herbs
- 1/2 tsp smoked paprika
cut the stems off the portobello mushrooms and give the caps a clean.
Prepare the marinade by adding 3 tbsp of olive oil, the balsamic vinegar, the soy sauce and the mixed herbs to a bowl.
Add the portobello mushrooms to the bowl and coat well with the marinade. Use your hands to rub the marinade into the mushrooms. Leave the mushrooms in the marinade for a few minutes, or longer if you have time.
Add a little oil to a pan and cook the mushrooms on a medium heat for around 7 minutes, flipping them over half way through.
Serve in burger buns along with your usual favourite burger toppings.
