Carrot Cake Energy Bites

Delicious carrot cake energy bites that you can make in 20 minutes. Made with whole ingredients and sweetened with dates and a little maple syrup.

Ingredients
  

  • 190 g carrots (chopped) (2 medium carrots, around 1/2 cups of chopped carrots)
  • 90 g oats (1 cup)
  • 2 tbsp shredded coconut (plus more for rolling)
  • 7 dates (pitted)
  • 3 tbsp maple syrup
  • 50 g chopped pecans (1/2 cup)
  • 3 tbsp peanut butter
  • 1 tsp vanilla
  • 2 tbsp chia seeds (ground)
  • 1 tsp grated ginger (fresh)
  • 2 tsp cinnamon

  1. Add the chopped carrots to a blender and blitz into small pieces. Remove the carrots from the blender.
  2. Add the dates to boiling water for five minutes to soften them.
  3. Add the oats, shredded coconut, pecans, chia seeds, grated ginger and cinnamon to the blender and blitz to the consistency of a course wholemeal flour.
  4. Drain the dates from the water and cut into fine pieces. Add to the blender along with the maple syrup, peanut butter and vanilla.
  5. Add back the carrots to the blender.
  6. Blitz everything in the blender until everything is mixed evenly. This may involve scraping down the sides of the blender several times.
  7. If you wish to roll the bits in shredded coconut, sprinkle some shredded coconut on a plate. Take some mixture in your hand and roll into a ball, then roll the ball in the coconut. Repeat the process until all the mixture is used up.
  8. If not eating the carrot cake bits immediately, hide in the back of the fridge from any curious children, partner or house mates.
