Best Vegan Black Bean Burgers With Oats

A super tasty veggie burger made with black beans, oats and walnuts. 
Prep Time 10 minutes
Cook Time 10 minutes
Servings: 6 burgers

Ingredients
  

  • 1 400 g tin of black beans
  • 50 g of oats
  • 1 very small red onion
  • 50 g of walnuts
  • 2 tbsp ground flax seeds
  • 2 tbsp tomato puree
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • 1 1/2 tbsp tamari or soya sauce
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tbsp olive oil
  • wholemeal burger baps

Method
 

  1. Combine the apple cider vinegar in a cup along with the ground flax seed and a tbsp of water and leave to sit while you prepare the other ingredients. 
  2. Put the drained black beans into a bowl and mash with a potato masher to a smooth consistency
  3. Add the finely chopped red onion to the bowl
  4. Blitz the walnuts in a blender until ground and add to the bowl. You can also bash them using a pestle and mortar but its a bit messier with walnuts flying everywhere. 
  5. Add the remaining ingredients to the bowl
  6. Scrape the flax and cider vinegar mixture into the bowl
  7. Mix everything in well with a wooden spoon
  8. Put a tbsp of oil into a pan on a high heat
  9. Roll the mixture into balls and place on the pan, then flatten into burger shapes with a spatula
  10. fry in the pan on a medium/high heat for about 5 minutes on each side, until both sides are a little browned
  11. Serve in some wholemeal baps along with your favourite toppings
