3 Ingredient Silken Tofu Chocolate Mousse

Ingredients
  

  • 100 g dark chocolate
  • 300 g silken tofu
  • 3 tbsp maple syrup

Instructions
 

  • Break the chocolate into pieces and place into a bowl. Then melt by placing the bowl sitting in a pot with some water on a gentle simmer so the heat from the steam heats the bowl and melts the chocolate. The bowl should be big enough to sit over the pot without being submerged in the water.
  • Once the chocolate is fully melted, set aside to cool for a few minutes.
  • Add the silken tofu to a separate bowl along with the maple syrup. Whip until the silken tofu breaks down into a whipped cream like smooth consistency, either using a hand whisk, electric whisk or electric blender. You can also use a food processor for this.
  • Once the chocolate has cooled for a few minutes, add to the bowl with the silken tofu and whip with whatever method used until the mixture has the consistency of a smooth mousse.
  • Spoon into separate ramekins or bowls and leave to set in the fridge for an hour.
  • Serve with some toppings you like such as raspberries and shredded coconut.

Notes

Prep time does not include refrigeration time and time taken for the melted chocolate to cool.
