2 Ingredient Oat and Spinach Pancakes

Servings: 4 pancakes

Ingredients
  

  • 100 g oats
  • 50 g spinach leaves
  • 2 tbsp oil
  • 1/3 tsp salt

Method
 

  1. Add the oats to a blender and blend for about 20 seconds into an oat flour
  2. Remove the oat flour and add the spinach along with 200ml water. Blend until you hae a smooth green liquid.
  3. Add back the oat flour and blend until smooth
  4. Leave for a few minutes to thicken and add a little oil to a pan on a medium/high heat on the hob
  5. Add some wrap mixture and cook for around 4-5 minutes on each side.
  6. Repeat until all of the mixture is used up
  7. Fill with your favourite wrap fillings and enjoy.
